Peanut Porridge a la Bill


Today I had, like many other mornings, peanut porridge for breakfast, and seeing as though I’m short on food news today, I’ll share with you peanut porridge as made by me. By the way this is the one that I make when I have time. The many mornings I eat peanut porridge it comes courtesy of Jenny’s Vegetarian.

1/2 Cup raw peanuts (I would sometimes drop a few roasted ones in for more flavor)

1/4 cup milk or coconut milk

Condensed milk to taste

1/8 cup flour or Foska oats(they’d better pay me for promotion)

2 tbsp. Sugar

2.5 cups Water

¼ tsp. nutmeg

Vanilla flavoring

Pinch salt

Wash peanuts and strain, don’t try to get of all the red stuff.

Place peanuts, milk, oats and just enough water to cover mixture into an electric blender. Blend until smooth. I suggest you start at a low speed then move higher while the mixture smoothes. Also if you are like me and want a few chunks in your porridge stop the blender at your required texture.

Bring the rest of the water to boil. Slowly add the mixture to the boiling water and stir the pot with a Spoon constantly for about 3 minutes. If there are lumps crush it against the side of the pot with spoon.

Let the porridge simmer for about 15 minutes stirring every few minutes then sweeten and flavor with nutmeg and salt. Add condense milk and sugar to taste.

PS: I don't use measuring utensils so all amounts are estimates. I'm confident my estimates are just about right though.
